Gluten-free and Value-added Cereal Products

Project Description:

The objective of this project is to develop teff as a crop for production of gluten-free products.This study is evaluating teff, a gluten-free cereal crop, for production in Montana.  Teff is grown primarily as a cereal crop in Ethiopia where it is ground into flour and used to make enjera, a sourdough type flat bread. Teff is not widely known in the USA, although it is cultivated in South Dakota and Idaho and is available in many health food stores. Dr. Eckhoff has identified an agronomically acceptable teff line that will be evaluated for use in gluten-free products.
