Project Description: |
Production of essential oils, culinary and medicinal herbs, and spice crops provides an opportunity for Montana farmers to diversify their agricultural operations. Research conducted at the Western Agricultural Research Center (WARC) involves production methods for specialty crops that can be used in value-added biobased products.
Consumers have become more aware of “functional foods” with reported health benefits. In response to this trend, we are developing methods for the analysis of garlic bulbs for the health-promoting phytochemicals allyl trisulfide, diallyl sulfide, and diallyl disulfide. This research is being done in cooperation with Dr. Duane Johnson and Louise Strang at the Northwestern Agricultural Research Center (NWARC) at Kalispell. We are also working with Dr. Jane Boles to develop antibacterial marinades and recipes for the processed meat industry.
