Nutrition and Exercise
Earn a Master of Science degree in Health and Human Development with an option in Nutrition and Exercise.


Understanding the interaction between exercise and nutrition is one key to understanding the influence of lifestyle and exercise training on health and disease. Students in this degree option work to integrate information relating to

exercise physiology, exercise metabolism, nutrition, and other complimentary sciences. A sample of issues addressed in this degree program includes macronutrient metabolism during exercise and recovery, influences of physical activity or inactivity on metabolism, influences of exercise, nutrition and genetics on risk of heart disease and diabetes, interactions between the nervous, endocrine, and immune systems in response to caloric restriction or the stress of exercise, application of these principles to a variety of real-life situations, and application of basic principles of metabolism to unique situations. These issues are addressed through course work, laboratory experiences, and research experiences. Students are encouraged to define their career goals and to focus their educational choices around their future goals.

Depending on the educational choices made, students may be prepared for employment or continuing education in the following careers or settings upon completion of this option:

•  Sports nutritionist (requires RD)
•  Exercise physiologist in clinical or sports settings
•  A variety of careers in the health and fitness industry
•  Medical school
•  Governmental agencies targeting public health
•  Personal trainer or advisor to strength and conditioning coaches
•  Doctoral graduate programs in Exercise Science or Nutrition
