Bolivian Express is a non-profit, online and print publication that provides students with a learning experience in Bolivia. Offering 1-3 month internship programs in journalism, video documentary production, or Spanish.
English Open Doors Program - A fee-free opportunity where volunteers spend 35 hours per week teaching students in English in Chile public schools. 
Instituto Franklin - Universidad de Alcal√° has a paid teaching internship for students looking to study a Masters and do paid teaching. 
Spanish Immersion in Costa Rica, Guatemala, & Peru - Take Spanish classes 4-6 hours/day, participate in optional language exchanges with locals, and enjoy host family accomodation w/ breakfast and dinner.

STA Travel is a very helpful site for students and teachers that will be traveling abroad.  They can help you find plane tickets with a 12 month delay, versus the regular 90 days, so you can buy one round-trip ticket for your study abroad versus two one-way tickets.  (You must have an international student number to take advantage of this 12 month delay. - See their website.)
