Bug Buffet Week: Academic Conference

Learn about the environmental and nutritional benefits of insects at Museum of the Rockies' Hager Auditorium. Arnold van Huis, a professor of Tropical Entomology at Wageningen University in the Netherlands will be speaking about entomophagy (eating insects) and his past work regarding this area. Dr. Dennis Oonincx, a colleague of van Huis at Wageningen, serves the Animal Science department with a specialty in insects as a source of nutrition. Brian Yazzie, also known as "Yazzie the Chef", will be traveling from St. Paul, MN to share knowledge on the incorporation of indigenous ingredients into modern food techniques.
